Практики снабжения и потребления в монастырском хозяйстве русского севера в середине – второй половине XVII в.
The sources of this study are the account books of the salt-producing enterprises of the Vologda Spaso-Prilutskii Monastery, located in three different geographical and climatic zones of a large region called the Russian North. Based on two theoretical approaches – the concept of imaginary space and food history – the article attempts to explore the formation and characteristics of the economic space of the northern part of the Moscow State in the Early Modern Times through the analysis of local food consumption markets. Combining these approaches with the classical methodology of source analysis, the author shows the organizational practices of the supply chain in local economic units (industries), the impact of the spatial factor on the processes of supplying food to such units; last, she shows several models of the structure and logistic of consumption.
